Whole Foods Plant Based Diet

Since I watched the Forks Over Knives documentary, I have stared reading both the Forks Over Knives book and the Engine 2 Diet. Let me tell you, there are some pretty interesting facts in both of these books. It really opens your eyes to the way our society eats and why there are so many diseases and overweight people.

I have to be honest, I don’t know if I could ever eat a 100% whole food/plant-based diet. I would miss dairy a whole bunch. Plus, I love seafood. I do not have a hard time eating a lot of fruits, veggies and whole grains because I love those also.

Here is what I have done so far: I have NOT had red meat in over a week. I also haven’t had eggs in over a week. I have used Almond Milk instead of milk about 80% of the time. The only real meat I had last week was a few slices of bacon….and let me tell you, my body let me know that it was not happy about that! Over the weekend I was out-of-state shopping with family. And of course we ate out every single meal. Mostly I ate fish along with my fruits and veggies but I did have chicken for 1 meal.

I really can’t complain about how my 9 year-old eats. He loves fruits and veggies. He will usually try anything at least once. I have been trying some new recipes with Broccoli and Cauliflower from Pinterest and they have been a hit. But my boy is a meat and potatoes man. He loves his meat and potatoes. So in an attempt to get a little more veggies and  little less meat on his plate I just reduce meat portions and increase everything else. He usually has oatmeal with a banana for breakfast so I can’t complain about that.

We are making slow gradual changes in our house. I don’t know if I will ever be able to eat ONLY the foods that go along with a whole foods/plants based diet. I do believe that it is much healthier for you and that you CAN get all the nutrients you need eating that way. We will continue to make small changes towards this goal.

A few items that I bought at the grocery store the other day that I have never bought before and have no idea how to prepare….Couscous and Quinoa. Anyone have any good recipes they would like to share that include these ingredients?
