Since watching the Forks Over Knives documentary I’ve attempted small changes to my diet. Less meat. No eggs. Almond milk instead of regular milk. No oil or butter. These are just a few of the changes. And by no means have I been perfect. Oh I so miss my cheese! I haven’t forced any of this upon my son yet. I wanted to get use to it first before changing things for him.
So last night I decided to try vegan potato soup. I got the recipe from Fat Free Vegan Kitchen. I left out the nutritional yeast and the cashews. Yes, I know this sounds weird and why in the world would I put either of those things in my soup but that is what the recipe called for. But I didn’t have either of those in my kitchen and some of the reviews stated that they had left them out and it tasted just fine. Nutritional yeast is supposed to be a replacement for cheese. I can not attest to this since I haven’t tried it yet. But it’s on my list.
Anywho, I made this soup. And it wasn’t bad. It definitely wasn’t the kind of potato soup I was use to but it wasn’t bad. However, it did not look like the picture from the recipe that I had followed. Mine kind of looked like light brown gravy. My son ate a few bites of it then promptly asked for a turkey sandwich. He said, “it just didn’t taste like your potato soup.” I used Almond Milk and next time I might try to use rice milk. The brownish color comes from the vegetable stock so I’m not sure how they got theirs so creamy white in the picture. I really wanted to add some shredded cheese to the top of my soup. Did I mention how much I miss cheese? I will definitely try this again. Maybe I just need to tweak a few things. Any suggestions are welcome!
