Baked Oatmeal

Do you have a favorite go-to recipe for which you always have the ingredients? This winter, I’ve become obsessed with baked oatmeal. I have a recipe that I’ve adjusted, and now it’s perfect. Well, in my opinion, it’s perfect because any food my son will eat while making  little “mmmm” noises is a recipe worth keeping around. I made some this morning and added almond slivers and diced apples. This is so yummy I wanted to share it with you.

3 cups quick oats

1 cup brown sugar

2 tsp cinnamon (I put 3 tsp in because I love cinn)

2 tsp baking powder

1 tsp salt

1 cup milk

2 eggs

1 cup applesauce (this is in place of butter-much healthier and gives it better flavor)

2 tsp vanilla

Mix the first 5 ingred. together. Beat milk, eggs, applesauce and vanilla together.  Add wet ingred. to dry ingred. then mix together. Then you can add any of the following: apples, raisins, blueberries, cranberries, walnuts, pecans, almonds.

Bake in an 8×8 pan at 350 degrees for 30-35 minutes.

Serve warm with some honey and milk.  YUM!!
